Ingredients
- 2 cans (15oz) black beans, rinsed and drained
 - 1 onion, diced
 - 2 cloves garlic, minced
 - 1 bell pepper, diced
 - 1 tablespoon extra-virgin olive oil
 - 1 cup frozen corn
 - 2 tablespoons chipotle salsa
 - 1 envelope taco seasoning
 - 4 cups vegetable broth (can substitute bone broth for added protein if desired)
 - 2 cups water
 - Juice of one lime
 
Instructions
- Heat oil in a large pot; add onion, garlic, bell pepper and saute until soft.
 - Carefully add remaining ingredients; simmer for 10 minutes.
 - Serve and enjoy.
