Quick Shrimp Tostadas

Get yourself in the festive spirits with this quick and easy lunch or dinner grab.

 

INGREDIENTS

6 Tostada 

1 c. Refried Beans

½ c. Greek Yogurt

2 c. Southwest Salad Kit

1 lb Shrimp, steamed at seafood counter

½ c. Shredded Cheddar Cheese


DIRECTIONS

  1. Place tostada on the plate and smear about 2 tablespoons of refried beans on it
  2. Swirl a little bit of Greek yogurt on top of the beans
  3. Sprinkle on the salad kit
  4. Layer on about 5-6 shrimps
  5. Top with a little more salad and cheddar cheese
