Pork Taco Salad

Pork might seem intimidating to cook but we’ve got you covered. We will cook until the internal temperature reaches 145 degrees and then let it rest to make sure we lock in the juices! It’s an easy way to bring some diversity to the diet outside of chicken and beef and is rich in nutrients like thiamine, zinc, vitamin B12 and B6, niacin, phosphorus and iron. 



1 lb. Pork Loin

¼ c. Salsa

¼ c. Pepitas

1 Salad Kit with desired toppings

⅛ c. Cilantro, chopped



  1. Preheat oven to 350 degrees
  2. Line a baking sheet with parchment paper
  3. Cook pork for 40-45 minutes, or until internal temperature read 145 degrees
  4. Let the pork cool for 10 minutes before slicing into ½ inch pieces
  5. In a large bowl combine the salad kit, toppings, and cilantro
  6. Layer on the salsa and pepitas and enjoy
