What You Need
- 1 lb. Fresh Salmon, boneless and skinless
- 2 tsp. Dijon Mustard + 1 Tbsp
- 1 Small Shallot
- ¼ c. Bread Crumbs
- 1 Egg
- ½ Medium Cucumber
- 1 Head Lettuce
- 3 Tbsp. Greek Yogurt
- 6 Slider Buns
How It’s Made:
- Heat a medium-sized skillet on medium-high heat
- In a food processor combine 2 teaspoons of Dijon mustard, shallots, egg, and breadcrumbs
- Add in salmon and lightly pulse about 6-8 times or to the desired consistency
- Form into 6 patties and cook in pan until internal temperature reads 145 degrees Fahrenheit (about 4-6 minutes per side)
- Thinly slice cucumber
- Tear lettuce leaves into individual pieces
- Take 1 lettuce leaf and fold it over on itself until it fits on the buns
- Place a patty on top
- Mix together Greek yogurt and 1 tablespoon Dijon mustard and spread on top bun
- Put 2 slices of cucumbers on top and top with bun
