These breakfast sandwiches are so simple with roughly 10 minutes total of hands on time. We personally like to cook up a double batch for 1 to eat for the week and the other to eat for the next few weeks as a rotational item since they are freezer friendly.
INGREDIENTS
4 Turkey Sausage Links
1 Tbsp. Seasoning of choice (taco seasoning, greek seasoning, etc)
6 Eggs
1 C. Egg Whites
1 Bag (10 Ounces) Frozen Pepper and Onions
12 Pieces Whole Grain Bread
Spray Avocado Oil
DIRECTIONS
- Preheat oven to 350 degrees
- Thaw the frozen veggies in the fridge overnight
- Cut the turkey sausage from it’s casing and brown it
- In a 9x13 pan, spray avocado oil all over
- Pour in egg whites and crack in the eggs and whisk to combine
- Add in vegetables and cooked sausage and stir to combine
- Place pan in oven for 30 minutes or until eggs are set
- Remove from oven and let cool
- Cut into 6 squares
If eating immediately, toast 2 slices of bread and place egg square between and enjoy
If freezing for later, place egg square in bag and freeze until ready. Warm through for 4-6 minutes in the microwave and serve with toasted bread.
