This recipe takes pork tenderloin to a whole new level by stuffing the pork with a delicious filling of apple and leek. We use an easy method of tying the roast together to keep the filling secure while browning and roasting the tenderloin. We use applejack, a brandy made from apple cider, to create a depth of flavor in the sauce. Serve with your choice of vegetables.

A quick and efficient method for cooking a whole bird on the grill is to butterfly it. In this recipe, we'll walk you through this popular technique. Smear your chicken with a zesty marinade and allow it to sit in the refrigerator overnight for the best flavor. Turn on one side of your grill and heat the chicken, skin side down, over the flame on the front and back side. Then move the entire bird to the unheated side of your grill to continue cooking internally. Serve with lime wedges and fresh salsa.
